![]() http://www.chateau-fontdubroc.com LE SELVES DE LA FONT DU BROC RED 2005 A blend of Mourvèdre, Cabernet Sauvignon, and Carignan, this wine is the essence of Provence. Acidity, present without excess, gives balance while creating a full, vigorous wine. The exceptionality of the terroir allows production beyond the normal climatic limits, yielding a wine of wonderful depth and complexity, with excellent balance to the taste. Best enjoyed when opened 1- 2 hours. Give it air!! Château La Font Du Broc accompanies my cooking marvelously. – Alain Ducasse Set deep in the land of lavender and olive trees, Château La Font Du Broc respects tradition and the pursuit of excellence. Sylvain Massa, owner of the domain, keeps French ancestral wine-making alive by faithfully following tradition. Each year 2,800 hours are spent harvesting the grapes by hand. French oak barrels are used during fermentation and aging. In the first stage of winemaking, Font du Broc uses ‘pigeage,’ to aid in the extraction of color, aroma, and tannins during cuvaison. Wine-making • Hand-selection of the most mature grapes • De-stemming of the grapes that are then crushed • Maceration for about 10 days, before fermentation, to soften the tannins • 3 weeks of fermentation, with 2 remontage (overpumping) or pigeage (head plumbing) a day • Aged 15 to 18 months in an Gothic cave 65 ft underground Back |
